"Put that on your blog"
Shana was here in Richmond last week, surprise visit to see Stephanie in Charleston then of course she had to stop in and see her big sis!
I wanted to make all her favorite things because the weather said snow.....they were right we had a snow day and stayed in our PJ's most of the day.
When I was snap chatting it up with sister Jan, she said, "I want scones can you put that on your blog"
My two favorite go to dishes, blueberry scones and quiche Lorraine, here you go.....
1 prepared pie crust, sometimes I make my own, Martha Stewart has a good one, or you can buy one and bake it as directed.
6 slices of bacon fried crisp and crumbled
1 1/2 to 2 cups half and half, I say this because if you have a deep dish pie plate you will need the 2 cups.
1 cup swiss or gruyere cheese
1 tsp pepper
1/2 tsp salt
dash of nutmeg
Mix the eggs and half and half, add seasonings
After the crust comes out of the oven, put the crumbled bacon on the bottom, then add the cheese. Put the pie plate on the oven rack, using a measuring cup, slowly pour egg mixture into your pie plate.
Cook for 15 mins at 425, then reduce temp to 325 for 20-25 mins or until you can see that the egg is set and not runny in the middle.
Let cool 15 mins
You can add anything you want to this, you can do a spinach and feta, or broccoli and cheddar, I just love it. My sisters and I serve it with a little salad and sunflower seeds and ranch dressing, going back to our Olive East days.
Now, my new daughter Kitty, asked me to put one of my tricks in the blog. If you don't have a fancy popcorn maker you can use 1/3 cup popcorn kernels in a brown paper lunch bag, fold over the top twice then microwave on the popcorn setting, listen for the popping to stop. Take out of microwave put whatever season or butter you like on your popcorn. So much better than store bought microwave popcorn!!
