Julie's stuffed peppers
One of the most creative cooks I know is my sister Julie. Not only is she an incredible cook but she cooks very healthy. At one time in my life I lived with her and Jim and lost 10 pounds!
We love stuffed peppers, my dad loves stuffed peppers, on Sunday when she sent me this pic I had to try her recipe. She "wings" it but I did some measuring when I made it so I could duplicate it for next time or share it with my subscribers. Here it goes.....Julie if you have anything to add please email us!

Julie’s stuffed peppers
4 red, green or yellow bell peppers, use tops of peppers chopped in your sauté
1 pound turkey sausage
1 egg
1 cup cauliflower rice
1/2 cup Panko
1/2 cup Parmesan, plus some for top and serving
1 shallot, chopped
3 cloves of garlic, chopped
1/2 tsp red pepper flakes
1 tsp dry basil
1 tsp dry oregano
1 tsp salt
1 tsp pepper
Marinara sauce, I use Mezzetta, sweet basil.......... Julie makes her own sauce.
Cut tops off the peppers, or cut in half, as pictured, place in a casserole dish, I put a little sauce on the bottom of the dish.
Sauté the onion, garlic, red pepper flakes, chopped peppers in a tablespoon of olive oil. Let cool.
Mix turkey sausage, egg, cauliflower rice, panko, parmesan, basil, oregano, salt and pepper. I use my hands but you can use a fork or spoon.
Incorporate the sauté mixture with your turkey mixture, ½ cup marinara sauce. Mix well.
Stuff peppers, put a little sauce on top, and some parmesan cheese
Bake at 375 for 40 min or until internal temp is 180. Serve with Marinara sauce and parmesan cheese.
