Huevos Rancheros

I love Mexican food. I think it started with my first job at Taco Mama's restaurant. I worked with 2 wonderful ladies that taught me how to count money, cook, take care of people and it was just a fun job. Later I brought in sister Julie and then Jeanette and I think even Jan.....I cant remember. I was 15 and I do remember I loved the cooking side of the operation. Just a little hole in the wall in downtown Kirkland, with a line out the door in the summer time.
With less carbs in my life its a challenge not having the corn tortillas that I love. I woke up hungry and went thru the frig and pantry and came up with this healthy version of Huevos Rancheros.
1 link chorizo
1 pound ground turkey
1/2 red onion
1 tsp garlic powder
1 tsp chili powder
1/4 tsp red pepper flakes
1/8 tsp cayenne pepper
1 tsp onion powder
1 tsp cumin
1 tsp salt
1 avocado
1/2 cup cherry tomato's cut in half
1 zucchini, diced
1 can southern style pinto beans (I found these Bushes beans that have no sugar added)
4 eggs
1. brown chorizo, onions, and ground turkey, add all the spices, then add diced zucchini, mix well, let simmer 8-10 mins
2. fry eggs sunny side up, I do this on very low heat and cover, so they cook well, salt and pepper
3. warm up beans, cut tomatoes and avocado
4. put a spoonful of beans on plate, then your ground turkey mixture, egg on top, then add tomato's and avocado
5. Enjoy, add some hot sauce or cheese if you like
