crock pot cooking

I don't have the instapot yet. I really only like a couple of things in the crock pot and my favorite is a pork roast. Everyone has there favorite way to do it but I just add onions lots of cloves of garlic and I have a Creole seasoning that I make up that has garlic powder, salt, pepper, chili powder and oregano. Add about a cup and a half of broth or water, let it cook all day.

We will just have the roast tonight with some butternut squash or sweet potatoes and a veggie.

But the next day I always do pork taco's with pickled red onion, some thinly sliced cabbage or lettuce and some avocados….oh my goodness, I love it! Here's my pickled red onion recipe.

Pickled Red Onions


· 3 cups water

· 1 red onion

· 3/4 cup apple cider vinegar

· 1 tsp salt

· 1 1/2 tsp sugar

· 1 garlic clove

· 5 black peppercorns


1. Bring 3 cups of water to a boil. Thinly slice the onions onto rings or half moons. Turn the heat off and add onions. Let them stand for no more than 1 minute, then drain.

2. In a mason jar combine salt, sugar, garlic, black peppercorns and vinegar. Stir to dissolve. Add onions. Close the lid and let the onions come to room temperature, then refrigerate.

3. You can add a little cool water if the vinegar doesn’t cover the onions.

Onions taste best after at least 24 hours. Store in the fridge for up to 1 month

BTW I got a job. I will be starting next week. I brought blueberry scones to the office today!
