Happy New Year, Happy Bday Jan!

Well we made it thru another year. The fall/winter months went by quick. I had the fortune to visit my family and some friends for Thanksgiving this year. Unfortunately, my father had a stroke 2 days before the visit so we spent a good portion of the time at Swedish hospital. He is in a Rehab center now in Grays Harbor, out where sister Shana lives. Thank you Shana for taking on that role.

One of my very good friends, Jan is celebrating her birthday today. It always gets lost in all the plans during the holiday rush. I just want you to know I am thinking about you, I miss you and this blog is dedicated to YOU!

Chuck and I are going to start the new year with some healthier, heart happy, recipes. We are going to be making a lot more fish, seafood, shrimp. Of course, cutting out some carbs. My sister Julie always says, "its not a diet sally, just eat healthy everyday" She is a role model for health and fitness!

When we were in Seattle Chuck and I made dinner for Julie, Jim, Jesse and Steph. Its called Nantucket Cod. You can make it with any white fish, serve it with some roasted brussel sprouts or asparagus and you have a yummy, quick, healthy meal.

Nantucket Baked Cod

Calories: 375 Cook Time: 30 minutes serves 2

Spice Blend

1/4 teaspoon salt

1/4 teaspoon paprika

dash black pepper

dash cayenne pepper

1 1/2 pounds fresh cod fillet

1 tablespoon butter, melted

juice of 1/2 lemon

Fresh basil

2 small tomatoes

2 tablespoons grated Parmesan cheese


  1. Combine the spices in a small bowl and set aside.

  2. Marinade tomato slices in olive oil, salt pepper and fresh basil

  3. Preheat the oven to 425 degrees F. Cut the fish into 4 equal portions (2 per serving), and arrange the fillets in a 9x13-inch baking dish or pan.

  4. Melt the butter in a small bowl in the microwave for 10 to 20 seconds. Brush the top of each fillet with butter, drizzle a little lemon juice on the fish, then sprinkle the spice blend evenly over the top of each fillet.

  5. Arrange 2 to 3 tomato slices over the top of each fillet.

  6. Sprinkle grated Parmesan cheese over each tomato slice. Each slice should be at least 50 percent covered with the cheese, and it's okay for some of the cheese to fall on the fish.

  7. Bake the fish, uncovered, for 8 minutes, then turn the oven to a high broil and continue to cook for 6 to 8 minutes or until the cheese on the tomatoes begins to brown. Serve two pieces of fish per serving with rice, salad or veggies on the side.

Well here's to a happy healthy 2020. I have some more recipes to share but still testing them out. I found one with spaghetti squash and shrimp. Halibut curry with coconut milk and Miso glazed salmon. After I try them out I will keep you posted.
