Pool time...summer recipes
Its hot and I don't feel like cooking. These are some recipes I like for summer. Grilled shrimp and veggies, spring rolls, and blueberries, cobbler, crisp, pie or just blueberries and yogurt with granola on top. Whenever Steph comes over I make homemade granola she loves it. Last night I did blackened fish taco's, I'll post my recipe. Enjoy!




Blackened Seasoning Recipe
Forget buying blackened spices when you can make this easy Homemade Blackened Seasoning Recipe at home for a lot less. Enjoy Blackened fish taco's.
Ingredients
· 1 heaping tablespoon of paprika
· 2 teaspoons salt
· 1 tablespoon garlic powder
· 1 tablespoons black pepper
. 1 teaspoon of cumin
· 1 tablespoon onion powder
· 1 teaspoons Cayenne pepper
· 1 heaping tablespoon of oregano
Instructions
1. Combine all the ingredients in an airtight container.
2. Mix together and save.
3. Coat fish or Chicken generously, bake or fry.
Fish Taco's
1 bag of coleslaw mix
1-2 jalapeno's chopped
dash of hot sauce
1/3 cup mayonnaise
1/3 cup sour cream or yogurt
juice of 1 lime
1 pound of any white fish, cod, mahi mahi, snapper or halibut
6 corn tortillas
Salsa
Baja sauce is 1/3 cup mayo and siracha mixed
Cut fish into long strips, season with blackened mix, coat pan with a layer of oil, turn pan to medium high, cook fish 3-5 mins a side. Drain on paper towel.
Cook corn tortilla in pan until brown.
Build taco with some coleslaw mix, then fish, then sauce, top with salsa, eat immediately!
