I got a text last night from one of my sisters Jan. I have known her since we were kids, lost touch, then found her again 5 or 6 years ago. Other than my daughter Stephanie, she always calls me Momma Sal. Her text to the group said, " Sal, where is the chili recipe!"
Ok Jan, here you go....
1 pound ground beef
1 pound chorizo
2 cups or whatever left over pulled pork you have
1 sweet onion chopped
5 cloves of garlic chopped
1-2 cans beans, I had white beans left over from a recipe I made last week so that's what I used but you can use kidney, pinto, black beans.
2 15 oz cans of tomato sauce or tomato puree
1 can of rotel
4-5 tablespoons of chili powder
1 tsp cumin
1 tsp smoked paprika
1 tsp ground oregano
2 tsp salt
1/4 tsp cayenne pepper
if you like it really spicy you can add some red pepper flakes, I added a few
Saute onions, add garlic, then spices, I like to saute all the spices together, then add meat, cook until brown. Add your pulled pork, tomato sauce, rotel. bring to boil then reduce to simmer for 15 mins or so. Add the beans last and then heat another 5 mins.
Serve with cheese, chips, avacodo and sour cream.
I made a little salad with butter nut squash and pecans, I will post that recipe later.
