It's summer burger time

It's that time, time for burgers. We have so many great restaurants here in Richmond with fantastic burgers, so I decided to do something a little different.  Lamb burger with tzatziki and an red onion, feta spinach salad. Well I got a big bag of spinach at Costco to make my smoothies, so I need to use that up :)

The burger is just a mixture of spices and feta, I used all ground lamb, some people do a combination of lamb and beef.  It truly was the best burger I've ever made!!  With that said, I had to share it with you...... 

 

 

 

Lamb burger with Tzatkiki

 

Ingredients

·         3 cups Greek yogurt

·         2 tablespoons lemon juice

·         1 garlic clove, minced

·         1 large English cucumber, shredded

·         1 tablespoon salt

·         1 tablespoon fresh dill chopped

·         salt & freshly ground black pepper

 

Directions

1.      Shred cucumbers with grater.  Put them in a colander and sprinkle with the tablespoon of salt (draws water out). Cover with a plate and sit something heavy on top. Let sit for 30 minute. Drain well and dry with a paper towel.

2.      In a large bowl, add cucumbers, garlic, lemon juice, dill, and a few grinds of black pepper. Blend,  then stir into yogurt. Taste before adding any extra salt, then salt if needed. Place in refrigerator for at least two hours before serving so flavors can blend.

3.      This will keep for a few days in the refrigerator, but you will need to drain off any water and stir each time you use it.

 

I usually make ½ the recipe.

 

Lamb burger

 

1 lb ground lamb

2 cloves of garlic minced

1/3 cup feta cheese crumbled

1/2 tsp oregano

1/2 tsp cinnamon

1/2 salt

1 tsp paprika

1/4 tsp coriander

1 tbsp. chopped fresh mint

3-4 Kaiser buns, toasted

 

2 cups spinach

1/4 sliced red onion

1/4 cup crumbled feta

2 tablespoons balsamic vinegar

 

mix the spinach, red onion, feta and vinegar, set aside.  Form 3-4 patties, grill 5-6 mins each side.  

 

Mix first 9 ingredients all together form into 3 or 4 patties. Grill 4-6 mins each side. Place burger on bun, top with spinach salad, then Tzatkiki, then top bun.  Enjoy!!
