breakfast frittata and Austin pic's

I don't know about most people but I feel I can cook a better meal myself than most restaurants. My go to breakfast for guest or a weekend brunch is a frittata.  I use to make quiche all the time but trying to eat healthier you can eliminate the crust and its a whole lot easier.

I just find stuff in the frig or pantry, sauté them up in a cast iron, whip up some eggs, add some cheese and cook at 350 for 25 minutes.  Wala…. you've got breakfast!

                                                          Breakfast Frittata

 

1/2 cup any meat, bacon, ham, sausage, chicken

8 eggs

3/4 cup half and half

1 cup any veggies, spinach, broccoli, asparagus

1 shallot chopped

1/2 tsp butter

1/2 cup any variety of cheeses, goat, cheddar, feta, swiss

roasted red peppers, jalapeño, green chilies (optional)

salt and pepper

 

Directions

Preheat oven to 350

 

sauté shallot in butter, add meat, then veggies. Sauté about 5 mins, until everything is softened a bit.

whip up the eggs and half and half, add salt and pepper, pour egg mixture into cast iron, top with cheese.  Let cook in pan 5 mins, then put into preheated oven for 25 mins or until egg is set.  Let cool serve with side of salad, tomato or avocado.

 

Over the weekend we were in Austin for Chuck's sisters wedding.
