As you know I love quiche, I have made so many, given so many away, eaten so many, made quiche for family, friends, coworkers, I have shared with everyone my quiche. It all started a long time ago when Julie and I worked at Olives East in Bellevue Square, Bellevue, WA.
The little café had espresso, before espresso was big, sandwich, soups and of course quiche. It came from a bakery, I don't remember the name, Julie might remember.....anyway I fell in love with quiche. Years later after we left our little café we started making our own. We would make it for friends for brunch or lunch. We always do a little side salad with ranch dressing and sunflower seeds just like Olives East. Over the years, I have tried different variations, different ingredients, and I have tried to make the crust. I just have never been able to make a good pie crust!! I usually just buy a pre-made one from store. So today when I am looking at my email and recipes I come across a web site, acupofjo.com she made a crust less quiche. Really, why have I never come up with this on my own. I have made frittatas in a cast iron pan, but its not the same delicate egg and cheese custard that you get with a quiche.
Well, I made it today, my own recipe which is very, very similar to hers but with no crust. Hallelujah!
It turned out so good, it looked so good to, no more do I have to worry about the crust, or feel guilty that I bought the crust at the store, I didn't even miss it.
BTW Chuck loved it! I have made many, many quiches in my life and all the men in my life love quiche!
Broccoli Bacon and Onion crustless quiche
Preheat oven to 350
Unsalted butter for greasing the pie dish
1/2 of a sweet onion
4 slices of bacon, cut into 1/2 in pieces
2 cups small broccoli florets
1 cup shredded white cheddar cheese
1 1/2 cups half and half
6 large eggs
Pinch of nutmeg, pinch of cayenne pepper
Salt and Pepper
Butter the pie dish
Blanch the broccoli in boiling salted water for 2 mins, then drain
Saute the onion and bacon until nice and brown
Whisk the eggs, half and half and spices in a bowl or large glass measuring cup
Put the broccoli in the pie dish, then the onions and bacon, top with cheese
(This is important because it can spill all over if you don't do this) Pull out the oven rack.
Now place the pie dish on the center rack of oven then pour in your egg mixture, carefully push
the oven rack in.
Cook for 35 mins, center might look a little soft but it will firm up as it cools. Let sit 10 mins then serve with a little side salad.
I make my own ranch dressing now, its so good, much better than store bought.
1/2 cup mayo
1/2 cup sour cream or greek yogart
1 cup buttermilk
squeeze of fresh lemon juice
Salt and pepper
I clove of garlic grated, or you can use garlic powder
any fresh herbs, optional
I just add everything to a mason jar and shake
