I love this beet salad with goat cheese and pistachios!
Recipe as follows.....
Wash fresh red or golden beets, cut in half, toss in olive oil and salt, wrap in foil, place on sheet pan, roast in 350 degree oven for 40-50 mins or until soft, let cool. When cool peel and slice.
Make a vinaigrette with olive oil, red wine vinegar, dijon mustard, honey, salt and pepper to taste. Toss beets in vinaigrette. Arrange on plate top with goat cheese and toasted pistachios and micro greens or arugala..Enjoy!
